Lobster, Citrus and Couscous Salad


6 oz. Lobster Meat chopped
5 c. Cooked Couscous
1 Grapefruit, Segmented
1 Orange, Segmented
3 tbsp Chopped Chives
3 tbsp Chopped Dill
1/2 c. Red Pepper, Diced
3 tbsp Lemon Juice
3 tbsp Orange Juice
3 tbsp Grapefruit Juice
1/2 c. Vegetable Oil
Salt and Pepper

Combine lobster, couscous, grapefruit segments, orange segments, chives, dill and red pepper in mixing bowl.
In a separate bowl combine the 3 fruit juices and the vegetable oil and season with salt and pepper. Pour dressing over couscous mixture.
Toss to combine all ingredients then place salad in refrigerator for 1 hour before serving. Can be served on salad greens or on its own.
