In Atlantic Canada, we stagger our fishing seasons to give freshly-moulted soft shell lobsters the chance to fill-out their new shells. But in some of our warmer waters and regions, softer shells are common and deliver a whole different kind of almost silken, sweet, and wonderful dining experience.
