Atlantic Canada’s well-managed, seasonal harvest yields the highest quality, most delicious lobsters in the world. Locally, we’ve all got our favourite regions, recipes, and experiences—it’s almost impossible to choose a favourite, as all Canadian lobster delivers premium taste.
Which is best? That depends what you’re looking for, where you are, and how you’ll ultimately serve or sell the bounty of Atlantic Canada:
In Atlantic Canada, we stagger our fishing seasons to give freshly-moulted soft shell lobsters the chance to fill-out their new shells. But in some of our warmer waters and regions, softer shells are common and deliver a whole different kind of almost silken, sweet, and wonderful dining experience.
