Lobster Roll Bites
Everything you want in a lobster roll – only smaller. After one bite, nobody will be able to keep their claws off these miniatures of the classic East Coast snack.
- 3 x 1.25 lb Lobsters, cooked and cooled
- 3 Tbsp Chives, chopped fine
- ¼ cup Celery, diced
- ½ cup Mayonnaise
- Salt and pepper to taste
- 3-4 Rolls, preferably split top
Shuck lobster meat from shells and cut into bite-size pieces. Add chives, celery, mayonnaise and salt and pepper to lobster meat and mix together until well combined.
Fill rolls with lobster mixture and serve immediately.
Alternatively, brush outsides of rolls with butter and toast or grill until golden and fill with lobster mixture.
